Asparagus Salad with Balsamic Dressing

What you will need.


Ingredients:
  • One bunch of Asparagus
  • 1/4 cup Almonds
  • 1/4 cup Balsamic Vinegar (You can replace this with Lemon Juice instead)
  • 1/4 cup Olive Oil
  • Salt and Pepper to taste (Optional)
  • 3 slices of Bacon
  • Parmesan cheese to taste

Directions:

  1. Cut the bacon into small pieces and cook on medium heat until crispy.

2. As the bacon is cooking, strip the asparagus from the bottom to the top. Flip it over and repeat. Finish with all the asparagus. You should have small strips of asparagus.



3. After you have finish the asparagus, and the bacon is cooked. Toast the almonds in the bacon fat. (Watch them carefully, almonds can burn very fast) Toast until a little golden brown.


4. After the almonds are done, set them aside to cool. Now mix your balsamic vinegar with the olive oil to make your dressing (Or your lemon juice with the olive oil)


5. Mix your dressing with the asparagus and place in a serving bowl. Top the salad with the toasted almonds,  bacon, and parmesan cheese. Serve and Enjoy!

Grilled Salmon with Zesty Citrus Salsa!


Grilled Salmon with Zesty Citrus Salsa


 Perfect for a refreshing and healthy outdoor BBQ or a romantic dinner for two.

Cook Time: 20mins
Over All Time: 45mins
Servings: 2
Ingredients:
  • 2 6oz Salmon Steaks
  • 1/4 Cup Minced Red Onion
  • 1/4 Cup Finely Diced Red Pepper
  • 2 Tomatoes (Gutted and Chopped)
  • 2 Oranges (Peeled and Chopped)
  • 3 Lemons (Peeled and Chopped)
  • 3 Limes (Peeled and Chopped)
  • 2 Tsp of Lemon Zest
  • 2 Tsp of Lime Zest
  • 1 Sprig of Parsley or Cilantro (Chopped)
  • Salt and Pepper to taste 
Directions:

For the Citrus Salsa,

In a small bowl, add the Minced Onion, Red Pepper, Chopped Tomatoes, Chopped Oranges, Chopped Lemons, Chopped Limes, Lemon Zest, Lime Zest, and the Chopped Parsley or Cilantro. Mix together delicately, then add salt and pepper to taste. Mix again, cover and place in the fridge so the juices will leak out of the salsa.

For the Grilled Salmon,

Brush the Salmon steaks with vegetable oil and sprinkle salt and pepper on both sides of the steak. Grill the steaks until they reach an internal temperature of 125 Degrees Fahrenheit. Top the grilled salmon with the citrus salad and serve immediately. Enjoy!
